Middleby is a leading provider of innovative food processing solutions. We are at the forefront of advancing technology in the food industry, dedicated to creating cutting-edge systems that redefine the way protein is processed. Our Protein Innovation Center (PIC) serves as a dynamic space for showcasing and demonstrating these state-of-the-art processing systems.
Acting as a subject matter expert, this role will be responsible for:
• Exceptional communication, verbally and electronically, with internal and external customers
• Maintain facility in a show-case ready state, including washing and sanitizing of all surfaces following events.
• Manage multiple, concurrent projects at the same time.
• Food safety protocols with direct relationship to Codex Alimentarius (GFSI), guidelines.
• Create effective strategies when unexpected business situations arise.
• Act as SME for basic knowledge in protein marination and product curing.
• Basic test kitchen supplies and tabletop appliances/equipment.
• Troubleshoot equipment to determine variables & deficiencies.
• Record keeping, scheduling, protein inventory and supplies.
• Developing and organizing standard PIC training programs.
• Outsource suppliers for protein and dry ingredients.

Requirements
· Bachelor’s degree in food science or related discipline.
· Culinary training, with experience in ingredients, meat science, sanitation, and processing preferred
· Experience in high-speed food manufacturing equipment strongly preferred
· Meat processing experience: (5-years).
· Knowledge in beef and pork primal - cuts.
· Basic meat and poultry laboratory science.
· Knowledge in processed meats, dried cured, course ground and emulsification.
· Knowledge of ingredient functionality as it relates to food product development.
· General understanding of USDA/FDA food safety directives
· Food safety protocols with direct relationship to Codex Alimentarius (GFSI), guidelines.
· Previous or current HACCP certification
· Global Food Safety Initiative background will be a plus.
· Valid Drivers License
· Must be willing to travel locally, to pick up supplies and ingredients.
